idf.py set-target esp32s3 is OK

then, trying with https-mbedtls example :

Creating esp32s3 image...
Merged 2 ELF sections
Successfully created esp32s3 image.
Generated /home/esp/esp-idf/examples/protocols/https_mbedtls/build/bootloader ...

reading esp32-wrover-b_datasheet_en.pdf and esp32 reference manual, I am not sure which GPIO I can select for RX and TX,
this for UART 1 / 2 (leaving UART 0 for console as default configuration)
