Factory will not be updated, but it is also not required. But it is insurance to be able to factory reset to a (hopefully) known stable firmware even after many ota updates.

i2c_master_read_byte does not actually perform a read until i2c_master_cmd_begin is called

I thought it was around 5k. Even if it is more, wouldn't you rather spend the money on extra modules that you can use or resell rather than waste parts and labor for a workaround?
