I'm working on the same thing, just in my case there is no way to use RMT.
gpio: 23,22,21,19,18,25,26,27 are for ETH
gpio: 16, 17 for hardware Serial (RS485)
uart1: gpio 9, 10 cant use.

But there is a gpio 32 as digital OUTPUT.
The same way as @bibble235 wrote it looks like working ...

Im working on it too. Just without GPIO00.

ETH_POWER_PIN -1
ETH_TYPE ETH_PHY_LAN8720
ETH_ADDR 1
ETH_MDC_PIN 23
ETH_MDIO_PIN 18

Also builded an ETH module, and its working.
I don't really understand this Clock modes, but maybe we can make one good ...
