I never used NTP since I have my own backends to reply with the time info. But if you have the time-lapse working, also no idea how that is since you didn't provide any demo code, then just build something that checks the NTP time on every wake up and if it's on the "service time" then take the pict...

I have some questions here, first of all I would like to ask with what server are you checking the logs, because as default in Apache you usually don't see this header requests. Interesting. But one question without using VSPI, if you use the default SPI pins from ESP32 (CLK -> 18 , MOSI -> 23)
Do you see the clock with your oscilloscope on that GPIO? Sadly I don't have now an oscilloscope handy otherwise I will test your code

If I'm understanding this correctly in AP mode you can connect to it but the Web server is not responding with the pages. And to what IP address you are making the request? What I would recommend to do first is to start from zero, just with a WiFi connect example and see if that works. So actually quite an empty sketch with nothing on the loop() and just the WiFi library and this 3 or 4 lines to connect to WiFi. I guess if you are using Arduino you have a WiFi example ...

Your findings look interesting. I found similar problem in the past using touch and I ended up using physical buttons :)
