BLE only with GAP

is it possible to have the BLE mode only with GAP and have ESP32 board connected with mobile. Without writing down the GATT functionality in code ?

The answer is no. In short GAP is responsible for advertising part, GATT is responsible for describing ATTributes (services, characteristics and descriptors) regardless your device is client or server.
