ESP32-S3 JTAG EFuse

Hey everyone,
quick question: where do i change these EFuses in the sdkconfig file? I don't seem to find them in menuconfig.

You don't, the CONFIG_SOC_* values are set on a chip-by-chip basis to indicate the features the currently selected ESP32 has (as in: Y on any of the options you quoted means the chip has an eFuse called that). You normally use espefuse.py to actually burn eFuses.
