Newbie here looking for some advice

Hi all. I am new to ESP32 ( normally and arduino person). I had an idea for a project ( a speedometer for a car) that would give me a nice big readout and have preset alerts for over a selected speed. In my ignorance i relied on Chat from microsoft to assist me , now after many many hours, giving up on the arduino ide and eventually giving up on vscode and platformio. Chat has informed me that the items i purchased would not actually work as required. My real question is which esp32 board would allow me to connect a 5" display and a gps unit to let me create my project.
The basic project is : large readout of current speed, readout of a selected (touch screen) speed and visual alert if speed is over the preset.
The ESP32 i got ( willing to buy something esle) is a Waveshare ESP32-s3-lcd-1.47.
The chat eventually said that waveshare devices are not easily compatible with platformio or ardiuno software.
So I am looking for the right direction to follow, ? Anyone able to give me some basic help

This board should be fine. It will work with both.
