You may be losing (blocks of) samples when recording because during erases/writes to the flash all other tasks and all non-IRAM ISRs are halted.

To get rid of the escape characters, as you said, you could use a color enabled terminal.

If you can't use a color enabled terminal, then, I believe the setting CONFIG_LOG_COLORS in sdkconfig should not be set.

At least, that got rid of them for me.

I did not use esp_timer_get_time() because it can be really 'slow', like 1-2us. esp_cpu_get_cycle_count() executes in a single CPU clock cycle.
