Pairing ESP32S3 with DSPIC33CH512MP508

For our next project, we need some ADCs, DACs, SENT sensors, etc. There is a PIC that would come with all of that, so we're thinking of doing pairing this with an ESP32S3.

Did anyone ever do something like that? I'm trying to access the software complexity with regards of a) writing the PIC firmware, b) programming the PIC through the ESP32S3, and c) the communication protocol between the ESP and the PIC.
