non contact high temp sensor to ESP32

Hi I am looking at building a data logger with ESP32 and Arduino IDE, particularly with a non contact high temp sensor up to 800 degrees C. I have found 1 sensor with a stated output signal of 4-20mA, 0-5V & 0-10V OR RS232/ RS485. Sensor requires a power supply of 12-36V, I haven't found one with a lower voltage requirement. I am novice. I am not sure about wiring and code.
