Change CONFIG_BT_GATTC_NOTIF_REG_MAX

Hello,
I used BLE with ESP32 and ARDUINO IDE.
I'm blocked with 5 Characteristics (3 services)
I would like to change CONFIG_BT_GATTC_NOTIF_REG_MAX to 10.
I don't understand how to do it.
Some tuto said it's not possible.
Other said change with menuconfig but I haven't. I downloaded ESPRESSIF SDK but i haven't "menuconfig" or "sdkconfig" in this folder.
Some help ?
